We all need a little carbo in our lives from time to time.  Silvia’s Vegan Garlic Herb Roasted Potatoes provide the perfect savory carby treat to get you through cold days.  It will warm you up, make your taste buds happy and give you a good dose of protein alongside your healthy carbs!

Even though they are carbs, potatoes are still a great source nutrition, they provide protein, healthy carbs and are a good source of fiber.  Plus they taste wonderful and leave you feeling full and satisfied at the end of a meal. Try it as the base to your next veggie bowl!

Tofu mixed with guacamole is probably one of our favorite combinations.  You get a deliciously creamy combination that livens up the taste of a potato and gives you a good dose of healthy fats and protein.  We reference that word quite a bit but, for vegans and vegetarians, protein is hard to come by so when we have a good way to get a lot of it, we want to tell you!!

This recipe is quick and easy to make.  It reheats beautifully, which makes taking it for a midday snack at work a real treat!  Give it a try for dinner tonight and let us know how you like it!

Vegan Garlic Herb Roasted Potatoes

Enjoy Vegan Garlic Herb Roasted Potatoes for a savory addition to your meal that is sure to warm you up on cold nights!

Ingredients:

4 large potatoes, peeled and sliced
2 tbsp olive oil
3 garlic cloves, minced
2 tbsp parsley, chopped
Salt
Pepper
Red pepper flakes

How-To:

Preheat oven to 400 degrees F. Slice potatoes in half of quarts. Place in a large bowl and add olive oil, salt, pepper, garlic, parsley. Toss until coated. Spread potatoes out on a baking sheet and roast for 45 minutes or until crisp. Flip once or twice while it’s cooking. Remove from oven, add fresh parsley and red pepper flakes. Serve with Toby’s Lite Tofu and guacamole.

What makes the holidays better? Simple recipes. Well, I guess we have that mentality all year round here at Toby’s. Simple recipes just make life better. Of course, this Winter Lite Blue Salad is no different. Simple recipe, delicious food, life better.

It’s hard to go wrong with apple, candied pecans, blue cheese, and greens. Another new favorite winter ingredient for us: tangerines. Add that to the mix and impress your holiday eaters! We love this recipe – and we hope you will too.

It’s really entirely unnecessary to walk you through the steps of making this salad, so we’ll make this quick. Start with your spinach greens. Thinly slice an apple (we recommend an apple like a gala or fuji – they have a nice sweet crunch).  Toss with candied pecans and a peeled and separated tangerine. Toss! Drizzle with Toby’s Lite Blue Cheese Dressing.

The Lite Blue Cheese is an important factor here because it drizzles just so much easier than the regular, thicker Blue Cheese. And, it’s an easy swap to make for a healthier holiday meal.

This Winter Lite Blue Salad is a healthier holiday option without sacrificing any of the good stuff. Made with spinach, apples, pecans, tangerine and Toby’s Lite Blue. Go lite for dressing, and you’ll save half the calories and fat. Easy swap and same delicious taste!

Ingredients

  • 5 ounces spinach
  • 1 apple, thinly sliced
  • 1/4 cup candied pecans
  • 2 tangerines, peeled and separated
  • Toby’s Lite Blue Cheese Dressing

How-To:

  1. Combine ingredients, drizzle with dressing, serve immediately!

You know when you’re hungry, festive, and still want to be healthy? If you can relate, this Christmas Pinwheel wrap is for you.

But seriously, this is the cutest wrap we’ve ever seen! It deserves its own recipe page because its just so festive. Thanks to Silvia for the amazing photo, creativity, and this beautiful Christmas Pinwheel Wrap.

Have it for lunch and be the envy of all your coworkers. Pack it for your kiddos and they’ll have the most festive lunch in the cafeteria. We promise!

Christmas Pinwheel Wrap

First up, chop and slice all the delicious veggies packed into this wrap. Then, lay out your tortillas (you could use spinach tortillas here to really make it green!) and spread your selected Toby’s Tofu Spread generously. Next, add half the veggie ingredients on to one tortilla. Roll and slice. Repeat for second tortilla.

Garnish with remaining veggies – Cabbage for the trunk and star, cut outs of peppers for the festive lights!

Christmas Pinwheel Wrap

Get festive and stay healthy with this Christmas Pinwheel Wrap. It’s a vegan wrap, arranged as a Christmas tree and decorated with veggie ornaments. Of course, the Christmas arrangement is optional and you’d still have a delicious wrap. It’s just not as fun that way!

Ingredients:

  • 2 large tortilla wraps
  • ¾ cup shredded red cabbage
  • ½ red bell pepper, sliced thin
  • ½ cup Toby’s Lite Tofu
  • ¼ cup shredded carrots
  • Handful of fresh spinach
  • 1 tbsp sesame seeds  

How-To:

  1. Spread Toby’s Tofu Spread & Dip on each tortilla.
  2. Add about half of the rest of the ingredients to each tortilla, roll up and slice into ¾” pieces.
  3. Do the same for the second wrap and place on a plate, in the shape of a tree. Sprinkle with sesame seeds and serve. Enjoy!

Toby’s Cucumber Rolls

We’ve tried making cucumber rolls before, and they always come out delicious, but nothing really special or worth sharing with you. That is, of course, until our friend Silvia steps in and takes them to the next level! These cucumber rolls, photo & recipe by our friend Silvia, are the perfect example of an easy appetizer that looks beautiful, tastes amazing, and is super easy.

And, now that she pulled them together so beautifully, I can finally see what the big difference was (besides her magically Silvia touch). The toothpicks! Opt for fancy spears, and your wraps well easily come together like this.

The herb garnishes make a big difference too. Toby’s Lite Tofu Spread paired with dill and pepper – plus the crunch of a cucumber – is nothing less than a crowd pleaser and enhances the taste of the already delicious tofu spread!

Cucumber Rolls

These cucumber rolls are easy to put together, and an easy vegan, crowd-pleasing appetizer.

Ingredients:

  • 1 English Cucumber
  • ¾ cup Toby’s Lite Tofu
  • Handful of dill, chopped
  • Pinch of black pepper

How-To:

  1. Use a potato or vegetable peeler to shave long, thin slices. Place slices on a paper towel to remove moisture.
  2. Spread a layer of Toby’s Tofu, about 1 tbsp, on a slice along with some dill. Roll up and secure with a toothpick. Do the same to the rest of the slices.
  3. Place on a plate, sprinkle with pepper and serve. Enjoy!

Holiday potlucks are great – until it’s about an hour before and you realize you have nothing to bring. Enter our last minute Christmas veggie trays.

These Christmas veggie trays are great for more than just your work potluck, too. For Christmas dinner, if you’re not hosting you’re often tasked with bringing appetizers or a tray of goodies. We say, don’t just buy some pre-made veggie tray and risk the maltodextrin, MSG, modified food starch, artificial colors and flavors, etc. etc. etc. Forget all those disgusting ingredients in those other veggie trays (mostly, in those dressings that come with them) and old veggies that may or may not have been sitting around or browning. Easier said than done, right?

Nope! We’ve got you covered. These last minute Christmas veggie trays are easy to pull together and about as festive as you can get. We love these unique and last minute Christmas veggie tray ideas – perfect for work potlucks, family dinners, holiday parties, ulgy sweater parties, white elephant parties, and pretty much whatever else you may do this December.

Our first favorite last minute Christmas veggie tray is this veggie ornament.

We decided to take a rimmed, circle plate and decorate it with veggies to make it look like a giant ornament. Easy, peasy. Veggies you need: baby carrots, grape tomatoes, and sliced cucumbers. Grab a jar of Toby’s Ranch and watch your beautiful veggie ornament tray disappear.

If you have the space, we suggest decorating the table with a few ornaments and adding a little square piece of paper to give the ornament effect!

This one is my personal favorite. It’s still easy to put together and but adds a few more veggies to the mix and takes just a little more creativity. You could also make this on an oval plate or a square plate and make the hat and beard a little longer. But, the nice thing is that they can both be made on matching plates.

Again, all you’ll need: grape tomatoes, cauliflower florets, baby carrots, and sliced cucumbers. Grab a jar of Toby’s dressing, we suggest Blue Cheese, and serve them up!

Pomegranates are in season from fall through the winter, perfect for the holidays, so deep in color, delightfully tart, and perfectly crisp yet juicy. And, if there’s one thing we’ve learned from Silvia recently: pomegranates are the new essential holiday ingredient. They just scream December!

We love crostinis as appetizers. They’re the perfect canapé – crunchy, bite-sized, and tasty. For the holidays, they’re easy to make. They don’t take any room up in the oven (unless that’s how you toast them), and they’re easily transportable. Plus, you get the benefit of looking like you slaved away over these little beauties when really it’s just a fancy mini, open-faced sandwich. They don’t even need to be served warm!

Avocado and Tofu Crostini

Silvia is at it again. These Avocado and Tofu Crostinis we just can’t stop drooling over! So, even better, these crostinis are vegan.

Take a half french baguette and slice into pieces. Toast your pieces of bread until just slightly browned. For each piece of toast, generously spread Toby’s Lite Tofu Spread & Dip and top with a slice of avocado. Repeat for each piece of toast. Arrange on parchment paper or a cutting board. Sprinkle your pomegranate seeds and chopped chives on the baguette slices. Drizzle with balsamic vinegar and olive oil.

And seriously, that’s all!

Avocado. Tofu. Crostini. It’s seriously a dream canapé, perfect for the holidays. The pomegranate seeds just take this to another level, drizzled with balsamic… We’re just never going to be able to do better than this! YUM. Silvia wins the award for best everything. Always. Yum.

Ingredients:

  • ½ french baguette, sliced
  • ½ cup Toby’s Lite Tofu
  • ½ avocado
  • 2 tbsp pomegranate seeds
  • 1 tbsp chives, chopped
  • Drizzle of balsamic vinegar

How-To:

  1. Toast bread until slightly browned. Top with Toby’s Tofu, avocado, pomegranate seeds and chives. Drizzle with balsamic vinegar. Serve. Enjoy!

Festive Mandarin Pomegranate Salad

Holiday meals call for festive salads. From easy to extravagant, there’s always room for another dish with veggies on the holiday table.

This Festive Mandarin Pomegranate Salad falls slightly to the more extravagant side and combines all the bright fall colors like pomegranate seeds, mandarin oranges,  and bright spinach greens. The best part is, it’s still really easy to throw together (no one needs to know that).

Personally, I like to use Toby’s lite dressings on salads when I’m using a blue cheese or a ranch. The lite dressings are made with yogurt instead of thicker sour cream and buttermilk, so they pour easier and coat the greens better. They’re also half the fat and calories (because of the yogurt swap) so they tend to be a little healthier when you’re dressing up a salad.

The Ranch and Blue Cheese Dressings I prefer for dipping or using as a condiment, but if you like a thicker dressing, you can definitely use the Ranch in place of Lite Ranch in this recipe.

Festive Mandarin Pomegranate Salad

This festive salad for those special holiday meals is easy to make, and combines the bright fall flavors of cranberries, orange, glazed walnuts, and blue cheese. Toby’s adds an elegant touch. And, this Festive Mandarin Pomegranate Salad comes together beautifully.

Ingredients:

  • 5 oz baby spinach
  • 2 mandarin oranges
  • 1 medium avocado
  • 1/2 cup pomegranate seeds
  • 1/2 cup walnut pieces
  • Toby’s Lite Ranch

How-To:

  1. Peel and segment the baby mandarin oranges. Dice the avocado. Combine all ingredients except dressing.
  2. When ready to serve, generously drizzle Toby’s Lite Ranch across the salad to make for a nice presentation!

Jalapeno Ranch Taquitos

These are a great appetizer or main course item. Usually we’re just snacking at Cinco de Mayo parties, so serve these and watch them disappear. You could get pre-made taquitos and drizzle Jalapeño Ranch on top. Or, you could make them yourself. We rolled up flour tortillas with a mixture of extra firm tofu, beans, veggies, and lots of spices inside. Topped with cheese, a cilantro lime hot sauce and some diced peppers! Pretty presentation and yummy foods.

Black Bean & Corn Tacos with Jalapeño Ranch

If sweet potatoes aren’t your thing, we suggest these corn & bean tacos drizzled with our Jalapeño Ranch Dressing. I pan fried some leftover corn, black beans and onions with salt and pepper until everything was cooked through. Shredded some cabbage and added diced tomatoes. It tastes most like a fish taco, minus the fish. But, fish would make a delicious addition here, too!

While I may have a long-time fear of the Easter bunny, or really anything in a mascot-like costume, I guess there are other parts of Easter I can get on board with. I’ve always wanted to try dying Easter Eggs naturally – like with turmeric, beets, or something similar. I think I’ll try my hand at the whole natural easter egg dye project this year. But, more exciting – for me anyway – are these Easy Easter Appetizers.

We came up with some delicious ideas perfect for appetizers, Easter Bunny treats (if you must!), or fun ways to get kiddos involved in the food prepping fun

Easter Bunny Carrot Treats

Love this idea! Shred some carrots, get some broccoli florets, and cut up a few pieces of pita bread into the shape of triangles. Slather on some Toby’s Tofu Spread, and arrange like the photo shows – into carrots!

What you’ll need:

  • Shredded carrots
  • Broccoli florets

Easter Egg Toasts

These are adorable and just the right amount of spicy. Probably not suitable for kiddos sensitive to spice – but you could use another kind of less-spicy sauce for the colored decoration. Or, you could use little veggies – olives, sliced tomatoes, herbs – as the decoration instead. But for us, there’s not a whole lot better than Toby’s Tofu Spread on toast with a little bit of hot sauce!

What you’ll need:

  • Sandwich bread for toasting
  • Easter egg cookie cutter
  • Hot sauce (we used sriracha)
  • Tofu Spreads (recommend Lite or Original, not jalapeño flavors!)

How-To:

  1. Cut your bread with a cookie cutter (or a knife works too). Toast.
  2. Spread Toby’s on your Easter Egg toast. Drizzle with hot sauce.

This Honey Mustard Apple Kale and Carrot Salad is super easy to put together as a side to any main meal. It’s perfect for winter with these cold weather crops. I swear kale and carrots just taste better in the winter. I’ve heard that when carrots have a layer of snow when they’re growing they taste sweeter. I’m not sure how true that is, but somehow it makes sense. Cold weather carrots are just so much better for some reason! I really just love using carrots in the winter. Just so good!

Just look at those cold weather veggies! It just wouldn’t be the same eating this salad in July.

To prepare, just slice up your carrots and apples into matchstick sized slivers and add to a bed of chopped kale. Drizzle with Honey Mustard. Done! Salad making is so easy with Toby’s dressing. Just rely on a few staple veggies, a leafy green and you’re set. Simple salads are the best ones.
