We all need a little carbo in our lives from time to time.  Silvia’s Vegan Garlic Herb Roasted Potatoes provide the perfect savory carby treat to get you through cold days.  It will warm you up, make your taste buds happy and give you a good dose of protein alongside your healthy carbs!

Vegan Garlic Herb Roasted Potatoes

Even though they are carbs, potatoes are still a great source nutrition, they provide protein, healthy carbs and are a good source of fiber.  Plus they taste wonderful and leave you feeling full and satisfied at the end of a meal. Try it as the base to your next veggie bowl!

Tofu mixed with guacamole is probably one of our favorite combinations.  You get a deliciously creamy combination that livens up the taste of a potato and gives you a good dose of healthy fats and protein.  We reference that word quite a bit but, for vegans and vegetarians, protein is hard to come by so when we have a good way to get a lot of it, we want to tell you!!

This recipe is quick and easy to make.  It reheats beautifully, which makes taking it for a midday snack at work a real treat!  Give it a try for dinner tonight and let us know how you like it!

Vegan Garlic Herb Roasted Potatoes

Enjoy Vegan Garlic Herb Roasted Potatoes for a savory addition to your meal that is sure to warm you up on cold nights!

Ingredients:

4 large potatoes, peeled and sliced
2 tbsp olive oil
3 garlic cloves, minced
2 tbsp parsley, chopped
Salt
Pepper
Red pepper flakes

How-To:

Preheat oven to 400 degrees F. Slice potatoes in half of quarts. Place in a large bowl and add olive oil, salt, pepper, garlic, parsley. Toss until coated. Spread potatoes out on a baking sheet and roast for 45 minutes or until crisp. Flip once or twice while it’s cooking. Remove from oven, add fresh parsley and red pepper flakes. Serve with Toby’s Lite Tofu and guacamole.

Vegan Quinoa Spring Salad

This is the perfect vegan quinoa spring salad brought to you by our BFF Silvia, is delicious and nutritious.  This salad is packed with greens and protein dense Toby’s Tofu that should fuel you through your longest days. The best part is that it’s completely vegan.

Spring Quinoa Vegan Salad

Quinoa is a fantastic source of protein to add to a salad.  It allows for those of us that are vegan and gluten free to get all the protein we need to fill us up and gives the benefit of acting like a carby filler.  It’s a great source of fiber and aside from that it tastes great! Add pumpkin seeds to it or a little garlic and even some bruschetta and you will have a versatile protein source that can pair with breakfasts, lunches and dinners, check out more quinoa recipes here.

We might be a little biased but the tofu is our favorite part of this recipe! One for the taste and two for its nutritional value. For those of you that are counting calories, note that this recipe has our lite tofu, so fewer calories but with all the protein you need to fuel you through your day.  Enjoy notes of lemon and dill when adding this to your salad!

Vegan Quinoa Spring Salad

Enjoy crafting this easy and delicious Vegan Quinoa Spring Salad with these savory and sweet simple ingredients!

Ingredients

  • 2 cups quinoa, cooked
  • 1 cup fresh spinach
  • 1 cup cucumber, chopped
  • ½ cup Toby’s Lite Tofu
  • ½ cup garbanzo beans
  • 1 clementine
  • ½ tomato, chopped
  • ½ cup mushroom, sliced
  • 2 tbsp olive oil
  • 2 tbsp hemp seeds
  • Pinch of salt
  • Pinch of lemon pepper

How – To:

1.  Cook quinoa according to package instructions. Let cool. Add quinoa and the rest of the ingredients to a bowl, toss until all ingredients are mixed.

These Christmas veggie trays are great for more than just your work potluck, too. For Christmas dinner, if you’re not hosting you’re often tasked with bringing appetizers or a tray of goodies. We say, don’t just buy some pre-made veggie tray and risk the maltodextrin, MSG, modified food starch, artificial colors and flavors, etc. etc. etc. Forget all those disgusting ingredients in those other veggie trays (mostly, in those dressings that come with them) and old veggies that may or may not have been sitting around or browning. Easier said than done, right?

Nope! We’ve got you covered. These last minute Christmas veggie trays are easy to pull together and about as festive as you can get. We love these unique and last minute Christmas veggie tray ideas – perfect for work potlucks, family dinners, holiday parties, ulgy sweater parties, white elephant parties, and pretty much whatever else you may do this December.

Your friends and family will be totally impressed – especially when you pair it with Toby’s. Who can really be disappointed? (No one!)

Our first favorite last minute Christmas veggie tray is this veggie ornament.

We decided to take a rimmed, circle plate and decorate it with veggies to make it look like a giant ornament. Easy, peasy. Veggies you need: baby carrots, grape tomatoes, and sliced cucumbers. Grab a jar of Toby’s Ranch and watch your beautiful veggie ornament tray disappear.

If you have the space, we suggest decorating the table with a few ornaments and adding a little square piece of paper to give the ornament effect!

This one is my personal favorite. It’s still easy to put together and but adds a few more veggies to the mix and takes just a little more creativity. You could also make this on an oval plate or a square plate and make the hat and beard a little longer. But, the nice thing is that they can both be made on matching plates.

Again, all you’ll need: grape tomatoes, cauliflower florets, baby carrots, and sliced cucumbers. Grab a jar of Toby’s dressing, we suggest Blue Cheese, and serve them up!

Pomegranates are in season from fall through the winter, perfect for the holidays, so deep in color, delightfully tart, and perfectly crisp yet juicy. And, if there’s one thing we’ve learned from Silvia recently: pomegranates are the new essential holiday ingredient. They just scream December!

We love crostinis as appetizers. They’re the perfect canapé – crunchy, bite-sized, and tasty. For the holidays, they’re easy to make. They don’t take any room up in the oven (unless that’s how you toast them), and they’re easily transportable. Plus, you get the benefit of looking like you slaved away over these little beauties when really it’s just a fancy mini, open-faced sandwich. They don’t even need to be served warm!

Avocado and Tofu Crostini

Silvia is at it again. These Avocado and Tofu Crostinis we just can’t stop drooling over! So, even better, these crostinis are vegan.

Take a half french baguette and slice into pieces. Toast your pieces of bread until just slightly browned. For each piece of toast, generously spread Toby’s Lite Tofu Spread & Dip and top with a slice of avocado. Repeat for each piece of toast. Arrange on parchment paper or a cutting board. Sprinkle your pomegranate seeds and chopped chives on the baguette slices. Drizzle with balsamic vinegar and olive oil.

And seriously, that’s all!

Avocado. Tofu. Crostini. It’s seriously a dream canapé, perfect for the holidays. The pomegranate seeds just take this to another level, drizzled with balsamic… We’re just never going to be able to do better than this! YUM. Silvia wins the award for best everything. Always. Yum.

Ingredients:

  • ½ french baguette, sliced
  • ½ cup Toby’s Lite Tofu
  • ½ avocado
  • 2 tbsp pomegranate seeds
  • 1 tbsp chives, chopped
  • Drizzle of balsamic vinegar

How-To:

  1. Toast bread until slightly browned. Top with Toby’s Tofu, avocado, pomegranate seeds and chives. Drizzle with balsamic vinegar. Serve. Enjoy!

  4. Easy to make (The main dish is what’s supposed to take so much time!)

This Fresh Vegan Brushetta? Our BFF Silvia created it, so obviously it’s festive and beautiful. Check. We’re pretty sure this would get gobbled up in seconds. Check. Toby’s + fresh basil and tomatoes – how can you go wrong with those flavors?! Check. Chop up a few ingredients, spread Toby’s on toast and serve. Sounds easy enough. Check. We’d say it meets all the criteria for a great holiday appetizer for sure.

It’s always nice to have a vegan appetizer at your own holiday festivities. If not just to satisfy dietary needs, to get some much needed greens, veggies, and fresh deliciousness to your holiday meals.

And, if you’re following a vegan diet, it’s the perfect thing to bring to a dinner or potluck (because no one will know it’s vegan, they’ll just happily enjoy).

We love the idea of decorating the plate with basil leaves, too. Almost looks like holly! Especially with the splash of red underneath – it’s all about dressing them up (and fooling your friends and family that your favorite recipes are really holiday recipes). 

Side note – We really shouldn’t just limit it to the holidays because it’s delicious any time of the year, perfect for a light snack or brunch!

But really, we love this recipe for the holidays because it’s a much needed light addition to the heavy food traditions of the holidays.

Ingredients:

  • 1 french baguette, sliced
  • 4 large tomatoes, chopped
  • ½ cup fresh basil, chopped
  • 4 cloves garlic, minced
  • ¾  cup Toby’s Lite Tofu (Original works too, if you don’t need/want a vegan version)
  • 2 tbsp olive oil
  • ½ tsp black pepper
  • Pinch of salt

How-To:

  1. In a large bowl, combine all ingredients but bread and Toby’s Tofu. Toss gently.
  2. Slice bread and toast until slightly browned. Top with Toby’s Tofu and tomato mix and serve immediately. Enjoy!

Jalapeno Ranch Taquitos

These are a great appetizer or main course item. Usually we’re just snacking at Cinco de Mayo parties, so serve these and watch them disappear. You could get pre-made taquitos and drizzle Jalapeño Ranch on top. Or, you could make them yourself. We rolled up flour tortillas with a mixture of extra firm tofu, beans, veggies, and lots of spices inside. Topped with cheese, a cilantro lime hot sauce and some diced peppers! Pretty presentation and yummy foods.

Black Bean & Corn Tacos with Jalapeño Ranch

If sweet potatoes aren’t your thing, we suggest these corn & bean tacos drizzled with our Jalapeño Ranch Dressing. I pan fried some leftover corn, black beans and onions with salt and pepper until everything was cooked through. Shredded some cabbage and added diced tomatoes. It tastes most like a fish taco, minus the fish. But, fish would make a delicious addition here, too!

Buffalo Chicken Cups - Dip in this Blue Cheese Dressing. IT IS SO GOOD!

We are getting closer to Super Bowl weekend and what’s a better way to cheer on your favorite team than by enjoying some classic appetizers? Around here, we like to get creative in our cooking and our football party spreads, so we whipped up these Buffalo Chicken Cups with Toby’s Blue Cheese. They’re tangy, easy to put together, and really REALLY delicious.

As you might already know we’ve been sharing our favorite appetizer recipes all week long and I promise, they just keep getting better and better!

While chicken wings will always be a go to game day appetizer we thought we would get creative and whip up something even better. These buffalo chicken cups have the same great taste as wings, but are not as messy to eat and a more fun and creative way to enjoy buffalo chicken! And with Toby’s Blue Cheese Dressing you can’t go wrong!

Buffalo Chicken Cups with Toby’s Blue Cheese

I said it already, but you’re going to love these Buffalo Chicken Cups. They’re made with wonton wrappers, chopped veggies and chicken mixed in with Buffalo Sauce. Dip in Toby’s Blue Cheese. Swirl our Blue Cheese Dressing with buffalo sauce to make an even more impressive spread (without much work!).

Ingredients:

  • 1 package of chicken breast tenderloins
  • 1 package of wonton wrappers
  • ½ cup of buffalo sauce
  • 3 stalks celery, diced
  • 1 cup cheddar cheese
  • Chives, chopped
  • Toby’s Blue Cheese Dressing

How-to:

  1. Preheat oven to 375 degrees.
  2. Cook chicken on stove top. Once finished, remove from pan and shred.
  3. Combine shredded chicken, diced celery and half a cup of buffalo sauce. Mix together and set aside.
  4. Place wonton wrappers into a muffin tin (we used a mini muffin tin and they came out as the perfect bite-sized appetizer!). Scoop a tablespoon size of the buffalo chicken mixture into each wrap.
  5. Place in oven for 5-8 minutes. Remove and sprinkle cheddar cheese and then place back in oven until cheese is melted.
  6. Remove from oven and let cool. Plate and garnish with chopped chives. Serve with Toby’s Blue Cheese Dressing.

The big game is this weekend! We’ve been busy in the kitchen testing out perfect recipes for the day. While we’re still a little bitter about the Seahawks loss, we’ll still be watching for at least the commercials. And of course, probably most importantly, we’ll be there for all the delicious finger foods, like these Loaded Smashed Potatoes.

Loaded baked potatoes are a classic dish but they weren’t quite the finger food we were looking for. Instead, we scaled it down to create the perfect, bite-sized appetizer: Loaded Smashed Potatoes! And what goes better with baked potatoes or smashed potatoes than Toby’s Ranch? Nothing.

Loaded Smashed Potatoes have all the goodness of a loaded baked potato in bite-size form. Slathered in Toby’s Ranch Dressing – you can’t really do any better.  These are easy to make and perfect for any game day appetizer. Cook them up this weekend for the Super Bowl or all season.

Ingredients:

  • 1 pound new potatoes (about 8-10)
  • ½ cup cheddar cheese
  • Olive oil
  • Salt and pepper
  • Chives, chopped
  • Bacon (optional, omit for veggie-friendly version)
  • Toby’s Ranch Dressing

How-To:

  1. Start by boiling your potatoes for about 15 minutes or until they are fork tender.
  2. Drain potatoes and place onto a greased (with olive oil) baking sheet.
  3. Smash the potatoes using the bottom of a cup or with a potato masher.
  4. Drizzle with olive oil and sprinkle with sea salt and cheddar cheese.
  5. Place pan under the broiler until cheese is melted.
  6. Remove from oven and plate. Top with chives and crumbled bacon (optional) and drizzle with Toby’s Ranch Dressing.

Toby’s Stuffed Mushrooms

Stuffed mushrooms are simple appetizers perfect for a game day viewing party. While most stuffed mushroom recipes are full of unhealthy ingredients, we kept ours clean and simple and stuffed them full with our delicious tofu pate!

Ingredients:

Start by cleaning your mushrooms and then carefully removing the stem. Layer mushrooms in your baking pan and drizzle with olive oil. Bake at 350 degrees for 10 minutes. Remove from oven and fill with Toby’s Original Tofu Spread. Sprinkle with Parmesan cheese and broil until melty. Remove from oven and plate mushrooms. Serve immediately.
