Winter Lite Blue Salad

What makes the holidays better? Simple recipes. Well, I guess we have that mentality all year round here at Toby’s. Simple recipes just make life better. Of course, this Winter Lite Blue Salad is no different. Simple recipe, delicious food, life better.

It’s hard to go wrong with apple, candied pecans, blue cheese, and greens. Another new favorite winter ingredient for us: tangerines. Add that to the mix and impress your holiday eaters! We love this recipe – and we hope you will too.

It’s really entirely unnecessary to walk you through the steps of making this salad, so we’ll make this quick. Start with your spinach greens. Thinly slice an apple (we recommend an apple like a gala or fuji – they have a nice sweet crunch).  Toss with candied pecans and a peeled and separated tangerine. Toss! Drizzle with Toby’s Lite Blue Cheese Dressing.

The Lite Blue Cheese is an important factor here because it drizzles just so much easier than the regular, thicker Blue Cheese. And, it’s an easy swap to make for a healthier holiday meal.

This Winter Lite Blue Salad is a healthier holiday option without sacrificing any of the good stuff. Made with spinach, apples, pecans, tangerine and Toby’s Lite Blue. Go lite for dressing, and you’ll save half the calories and fat. Easy swap and same delicious taste!

Ingredients

  • 5 ounces spinach
  • 1 apple, thinly sliced
  • 1/4 cup candied pecans
  • 2 tangerines, peeled and separated
  • Toby’s Lite Blue Cheese Dressing

How-To:

  1. Combine ingredients, drizzle with dressing, serve immediately!

Festive Mandarin Pomegranate Salad

Holiday meals call for festive salads. From easy to extravagant, there’s always room for another dish with veggies on the holiday table.

This Festive Mandarin Pomegranate Salad falls slightly to the more extravagant side and combines all the bright fall colors like pomegranate seeds, mandarin oranges,  and bright spinach greens. The best part is, it’s still really easy to throw together (no one needs to know that).

Personally, I like to use Toby’s lite dressings on salads when I’m using a blue cheese or a ranch. The lite dressings are made with yogurt instead of thicker sour cream and buttermilk, so they pour easier and coat the greens better. They’re also half the fat and calories (because of the yogurt swap) so they tend to be a little healthier when you’re dressing up a salad.

The Ranch and Blue Cheese Dressings I prefer for dipping or using as a condiment, but if you like a thicker dressing, you can definitely use the Ranch in place of Lite Ranch in this recipe.

Festive Mandarin Pomegranate Salad

This festive salad for those special holiday meals is easy to make, and combines the bright fall flavors of cranberries, orange, glazed walnuts, and blue cheese. Toby’s adds an elegant touch. And, this Festive Mandarin Pomegranate Salad comes together beautifully.

Ingredients:

  • 5 oz baby spinach
  • 2 mandarin oranges
  • 1 medium avocado
  • 1/2 cup pomegranate seeds
  • 1/2 cup walnut pieces
  • Toby’s Lite Ranch

How-To:

  1. Peel and segment the baby mandarin oranges. Dice the avocado. Combine all ingredients except dressing.
  2. When ready to serve, generously drizzle Toby’s Lite Ranch across the salad to make for a nice presentation!

Certain things were meant to go together. This Winter Apple Honey Mustard Salad brings together a few of those things: apples, walnuts, dried cranberries, and Toby’s Honey Mustard Dressing. Mix in some mixed baby greens, and you have a delicious salad basically ready to go. Beautiful, delicious, and super easy. Just as salads should be.

The apples and cranberries give the salad a nice balance of sweet and tart. The walnuts add just the right amount of crunch. And, the mixed greens bring in another layer that just spinach or romaine wouldn’t. Simple recipe making at its finest.

This salad is great for holiday meals and fall gatherins, but it’s great for a side or a lunch too. Pair with your choice of protein, and you’ll really be all set.

The Most American Deviled Eggs, Ever by Fresh Chef Nikki

We’ve been obsessing over Fresh Chef Nikki’s instagram feed, and we are so honored to have a recipe featuring our goodies! Well done Nikki, this is amazing.

Most American Deviled Eggs Ever | Red white and blue amazingness featuring Toby's Jalapeno Ranch Dressing.

From Nikki herself: “As you may know, I’m a huge fan of eggs in all forms and frequently post food photos featuring eggs. I thought I’d make the most American deviled eggs, ever. Hence, these came about. This screams America. I used your Jalapeño Ranch dressing, and it was the perfect addition to the stuffing of the eggs! I absolutely love your product!”

Ingredients:

  • 3 medium white potatoes
  • 6 strips bacon
  • 1 tsp olive oil
  • 4 tbsp. chopped chives
  • 1/2 cup shredded cheddar cheese
  • 1/4 tsp truffle salt
  • 1/4 tsp black pepper
  • 1/4 cup Toby’s Jalapeño Ranch dressing
  • 9 hardboiled eggs, peeled
  • 15 drops red and blue food coloring dye
  • 1 cup boiling water + 1 tsp vinegar

How-To:

Divide boiling water and vinegar evenly into 2 separate Tupperware that can loosely fit 3 eggs each. Add 15 drops blue coloring to one container, and 15 drops red coloring to the other and stir. Add 3 eggs into each container and toss around with a spoon. Frequently roll eggs around to evenly coat with the coloring, let soak for about 10 minutes. Run eggs under cold water, and pat dry. Cut all eggs in half and remove the yolks. To make the filling, bring a medium pot of water with potatoes to a boil, cover, and cook for about 15-20 minutes until fully cooked through. Remove from heat and water and let cool completely. Meanwhile, chop up bacon into as small of pieces as possible, then fry in 1 tsp olive oil until browned and crispy. Reserve 2 tbsp. of the bacon fat for later, and reserve 1/3 of the bacon bits for the garnish. Once the potatoes have completely cooled, peel the skin and dice into small cubes and place in a mixing bowl. Add bacon bits, reserved bacon fat, 3 tbsp. chives, shredded cheese, truffle salt, black pepper, and Toby’s Jalapeño Ranch dressing. Combine all ingredients and set aside. Stuff the eggs with the potato salad, and garnish with remaining bacon bits, chives, and of course, an American flag!

These are a great appetizer or main course item. Usually we’re just snacking at Cinco de Mayo parties, so serve these and watch them disappear. You could get pre-made taquitos and drizzle Jalapeño Ranch on top. Or, you could make them yourself. We rolled up flour tortillas with a mixture of extra firm tofu, beans, veggies, and lots of spices inside. Topped with cheese, a cilantro lime hot sauce and some diced peppers! Pretty presentation and yummy foods.

Black Bean & Corn Tacos with Jalapeño Ranch

If sweet potatoes aren’t your thing, we suggest these corn & bean tacos drizzled with our Jalapeño Ranch Dressing. I pan fried some leftover corn, black beans and onions with salt and pepper until everything was cooked through. Shredded some cabbage and added diced tomatoes. It tastes most like a fish taco, minus the fish. But, fish would make a delicious addition here, too!

We are getting closer to Super Bowl weekend and what’s a better way to cheer on your favorite team than by enjoying some classic appetizers? Around here, we like to get creative in our cooking and our football party spreads, so we whipped up these Buffalo Chicken Cups with Toby’s Blue Cheese. They’re tangy, easy to put together, and really REALLY delicious.

As you might already know we’ve been sharing our favorite appetizer recipes all week long and I promise, they just keep getting better and better!

While chicken wings will always be a go to game day appetizer we thought we would get creative and whip up something even better. These buffalo chicken cups have the same great taste as wings, but are not as messy to eat and a more fun and creative way to enjoy buffalo chicken! And with Toby’s Blue Cheese Dressing you can’t go wrong!

Buffalo Chicken Cups with Toby’s Blue Cheese

I said it already, but you’re going to love these Buffalo Chicken Cups. They’re made with wonton wrappers, chopped veggies and chicken mixed in with Buffalo Sauce. Dip in Toby’s Blue Cheese. Swirl our Blue Cheese Dressing with buffalo sauce to make an even more impressive spread (without much work!).

Ingredients:

  • 1 package of chicken breast tenderloins
  • 1 package of wonton wrappers
  • ½ cup of buffalo sauce
  • 3 stalks celery, diced
  • 1 cup cheddar cheese
  • Chives, chopped
  • Toby’s Blue Cheese Dressing

How-to:

  1. Preheat oven to 375 degrees.
  2. Cook chicken on stove top. Once finished, remove from pan and shred.
  3. Combine shredded chicken, diced celery and half a cup of buffalo sauce. Mix together and set aside.
  4. Place wonton wrappers into a muffin tin (we used a mini muffin tin and they came out as the perfect bite-sized appetizer!). Scoop a tablespoon size of the buffalo chicken mixture into each wrap.
  5. Place in oven for 5-8 minutes. Remove and sprinkle cheddar cheese and then place back in oven until cheese is melted.
  6. Remove from oven and let cool. Plate and garnish with chopped chives. Serve with Toby’s Blue Cheese Dressing.

The big game is this weekend! We’ve been busy in the kitchen testing out perfect recipes for the day. While we’re still a little bitter about the Seahawks loss, we’ll still be watching for at least the commercials. And of course, probably most importantly, we’ll be there for all the delicious finger foods, like these Loaded Smashed Potatoes.

Loaded baked potatoes are a classic dish but they weren’t quite the finger food we were looking for. Instead, we scaled it down to create the perfect, bite-sized appetizer: Loaded Smashed Potatoes! And what goes better with baked potatoes or smashed potatoes than Toby’s Ranch? Nothing.

Loaded Smashed Potatoes have all the goodness of a loaded baked potato in bite-size form. Slathered in Toby’s Ranch Dressing – you can’t really do any better.  These are easy to make and perfect for any game day appetizer. Cook them up this weekend for the Super Bowl or all season.

Ingredients:

  • 1 pound new potatoes (about 8-10)
  • ½ cup cheddar cheese
  • Olive oil
  • Salt and pepper
  • Chives, chopped
  • Bacon (optional, omit for veggie-friendly version)
  • Toby’s Ranch Dressing

How-To:

  1. Start by boiling your potatoes for about 15 minutes or until they are fork tender.
  2. Drain potatoes and place onto a greased (with olive oil) baking sheet.
  3. Smash the potatoes using the bottom of a cup or with a potato masher.
  4. Drizzle with olive oil and sprinkle with sea salt and cheddar cheese.
  5. Place pan under the broiler until cheese is melted.
  6. Remove from oven and plate. Top with chives and crumbled bacon (optional) and drizzle with Toby’s Ranch Dressing.

Strawberry Feta Salad with Chunky Feta Dressing - YUM!

Strawberry Feta Salad

This Strawberry Feta Salad is a go-to recipe. Easy to pull together and always delicious! Really though, anything with Toby’s Chunky Feta dressing is a family favorite at my house. I’m constantly pestered to bring it home to my in-laws. They mix it with coleslaw, dip veggies, and top all their salads with it. Seriously addicting! So, anytime I have to make a salad for dinner I always bring along Toby’s Chunky Feta Dressing. That way, I can never disappoint and I earn good daughter-in-law points.

This time, instead of just greens and whatever veggies I have lying around, I added a little fruit into the mix. Strawberries and feta naturally go together, so why not Toby’s & strawberries? Like I said, another reason to bring out the feta is always welcome, so we tried it out. Results were amazing! Definitely one we’ll be making again for family gatherings.
