The big game is this weekend! We’ve been busy in the kitchen testing out perfect recipes for the day. While we’re still a little bitter about the Seahawks loss, we’ll still be watching for at least the commercials. And of course, probably most importantly, we’ll be there for all the delicious finger foods, like these Loaded Smashed Potatoes.

Loaded baked potatoes are a classic dish but they weren’t quite the finger food we were looking for. Instead, we scaled it down to create the perfect, bite-sized appetizer: Loaded Smashed Potatoes! And what goes better with baked potatoes or smashed potatoes than Toby’s Ranch? Nothing.

This game day appetizer has all of the flavor of a loaded baked potato in just one little bite. Top it off with Toby’s Ranch Dressing there is nothing better! Loaded Smashed Potatoes are simple to make and perfect for any game day watch party.

Loaded Smashed Potatoes with Toby’s Ranch Dressing

Loaded Smashed Potatoes have all the goodness of a loaded baked potato in bite-size form. Slathered in Toby’s Ranch Dressing – you can’t really do any better.  These are easy to make and perfect for any game day appetizer. Cook them up this weekend for the Super Bowl or all season.

  • 1 pound new potatoes (about 8-10)
  • ½ cup cheddar cheese
  • Olive oil
  • Salt and pepper
  • Chives, chopped
  • Bacon (optional, omit for veggie-friendly version)
  • Toby’s Ranch Dressing


  1. Start by boiling your potatoes for about 15 minutes or until they are fork tender.
  2. Drain potatoes and place onto a greased (with olive oil) baking sheet.
  3. Smash the potatoes using the bottom of a cup or with a potato masher.
  4. Drizzle with olive oil and sprinkle with sea salt and cheddar cheese.
  5. Place pan under the broiler until cheese is melted.
  6. Remove from oven and plate. Top with chives and crumbled bacon (optional) and drizzle with Toby’s Ranch Dressing.

Tobys Stuffed Mushrooms | Great for game watch parties & healthier appetizers

Toby’s Stuffed Mushrooms

We created this Stuffed Mushrooms recipe a few months back, in the prime time of Oregon Duck football season. It’s an easy one to put together, and a perfect crowd pleasing recipe. Normally, we don’t recommend cooking up our tofu spread, but a little broiling doesn’t hurt it – especially when served right away.

Just don’t tell the guys it’s tofu and no one will ever know about a healthier swap. You could also try this with Toby’s Jalapeño Tofu Spread & Dip, but for now we kept it plain and simple. If you are looking for a little spice, try tossing a little hot sauce on top after broiling.

Toby’s Stuffed Mushrooms

Stuffed mushrooms are simple appetizers perfect for a game day viewing party. While most stuffed mushroom recipes are full of unhealthy ingredients, we kept ours clean and simple and stuffed them full with our delicious tofu pate!


Start by cleaning your mushrooms and then carefully removing the stem. Layer mushrooms in your baking pan and drizzle with olive oil. Bake at 350 degrees for 10 minutes. Remove from oven and fill with Toby’s Original Tofu Spread. Sprinkle with Parmesan cheese and broil until melty. Remove from oven and plate mushrooms. Serve immediately.

Sweet Potato Tots

Sweet potatoes offer a little more nutrition than your standard white potato, so we thought we’d try a twist on your regular tater tot. With an abundance of sweet potatoes laying around the kitchen we thought we would get creative and whip up a batch of some homemade Sweet Potato Tots!

Since these are oven-baked Sweet Potato Tots, you’re skimming down on all that extra oil and fat, so you could say they’re better for you, too. And, easier than dealing with all that deep fryer mess and hassle!

These tots are easy enough that to make them as an after school snack for your kiddos, prep in advance for game day watch parties, or whenever you’re feeling like some yummy tots! After baking, you could also freeze them in batches and just toss into the oven – cook for slightly longer when reheating.

These sweet potato tots are an easy snack to throw together and absolutely irresistible when paired with and of Toby’s Ranch flavors (Regular, Lite or Jalapeño). Sometimes all you need is a little ranch & sweet potatoes – especially during game day watch parties!


Oven Baked Sweet Potato Tots - healthier spin on your standard, deep-fried tater tots


  • 2 large sweet potatoes, peeled
  • 1 egg
  • ¼ cup flour
  • ¼ teaspoon sea salt
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder


  1. Preheat oven to 425ºF.
  2. Add the peeled sweet potatoes to a large pot of boiling water and cook for 10-15 minutes, until just slightly softened (this makes them easier to grate). Drain and cool until you’re able to handle them.
  3. Grate the cooled sweet potatoes with a cheese grater or in a food processor with the grating blade.
  4. Combine the shredded potato and egg in a medium bowl. Add flour, salt, paprika and garlic powder and stir until just combined.
  5. Form the potato mixture into 1-inch balls and place on a baking sheet.
  6. Bake for approximately 10-15 minutes, turning the tots every 5 minutes to cook evenly.
  7. Remove from oven and let cool. Plate and serve with Toby’s Lite Ranch Dressing or other Toby’s Ranch of choice!

  • 4 cups winter mixed greens
  • 1/2 cup snow peas, trimmed and cut into smaller pieces
  • 1 small cucumber, halved and sliced
  • 1 avocado, peeled and sliced

  1. Combine winter greens, snow peas, cucumber and avocado. Sprinkle pomegranate seeds. Serve with Chunky Feta Dressing and enjoy!

This Honey Mustard Apple Kale and Carrot Salad is super easy to put together as a side to any main meal. It’s perfect for winter with these cold weather crops. I swear kale and carrots just taste better in the winter. I’ve heard that when carrots have a layer of snow when they’re growing they taste sweeter. I’m not sure how true that is, but somehow it makes sense. Cold weather carrots are just so much better for some reason! I really just love using carrots in the winter. Just so good!

Just look at those cold weather veggies! It just wouldn’t be the same eating this salad in July.

To prepare, just slice up your carrots and apples into matchstick sized slivers and add to a bed of chopped kale. Drizzle with Honey Mustard. Done! Salad making is so easy with Toby’s dressing. Just rely on a few staple veggies, a leafy green and you’re set. Simple salads are the best ones.

This salad is the perfect lunch salad to get you through a dreary January day. Quinoa is a delicious and nutritious staple, and it pairs perfectly with our Chunky Feta Dressing and in salads (or both!).

Quinoa also has a ton of protein, so no need to add beans or meat to this salad – it’ll get you though the day!

We started with fresh, local winter greens and topped them with refreshing veggies – like tomatoes, radishes and cucumbers. Add avocado for fat, and drizzle with the world’s best Feta Dressing. Seriously, a lunchtime staple.

If you’re transporting your lunch, just wait to add the dressing until you’re about to eat. Or, add the dressing only in the quinoa and stir it up when you’re ready. That way, your greens and other veggies stay nice and fresh.

  • About 3 ounces (or three handfuls) mixed greens
  • 1/2 medium avocado, sliced
  • 2 radishes, sliced
  • 1/2 small cucumber, chopped into bite-sized pieces
  • 1 handful cherry tomatoes, sliced in half
  • 1/2 cup cooked quinoa
  • Toby’s Chunky Feta Dressing


  1. Arrange the salad starting with the mixed greens then veggies. Top with cooked quinoa. Drizzle with Toby’s Chunky Feta and serve immediately.

It’s almost a new year, so why not add a twist to the classic garlic bread. Start by slicing your french baguette into ½ inch thick slices. Drizzle with olive oil and chopped garlic and toast in oven for about 5 minutes on 350ºF. Remove from oven and sprinkle cheddar and mozzarella cheese mixture on top. Throw back in oven for another 5-10 minutes depending on how melted you would like the cheese.

Plate your garlic bread, and drizzle Toby’s Blue Cheese. Top with fresh chives and enjoy!

This tomato, bacon, and feta crostini is sure to be the hit at any New Year’s Eve party!

Start by chopping your bacon into small chunks and throwing into a frying pan. While that is cooking, toast your french baguette for about 10 minutes on 350ºF. Slice into ½ inch thick slices and top with Toby’s Chunky Feta. Add crumbled bacon and top with a halved tomato.

Start by toasting your french baguette for about 10 minutes on 350ºF. Slice into ½ inch thick slices and spread with goat cheese. Stack a sliced pear or apple on top. Drizzle with Toby’s Honey Mustard Dressing, and sprinkle with dried cranberries.

An oldie, but a goodie, this ranch caprese crostini is delicious and one of our favorites here at Toby’s.

Again, start by toasting your french baguette for about 10 minutes on 350ºF. Slather with ranch and top with 1-2 tomato slices, torn basil leaves, salt and pepper. Drizzle with olive oil and vinegar.

Canapés are the perfect holiday appetizer because they’re bite sized, delicious, and, most importantly, easy to put together. Have people make their own with a little canapé bar, or serve up some of your favorites.

In case you’re a little lost, we put together this fool-proof guide to making perfect canapés with our tofu spreads and a few recipes for our favorite holiday canapés.

Start with a cracker or sliced veggie (like thinly sliced cucumber rounds). Scoop Toby’s tofu – either with a melon baller or a pastry bag for the perfect presentation. Top with another veggie, like halved cherry tomatoes, something pickled, or some avocado. Garnish with a drop of balsamic reduction, a dash of hot sauce or with sprouts and herbs.

Try slices of pita bread and some spicy options with pickled jalapeños and a dash of hot sauce. We recommend going with the original or lite tofu spreads for the hotter ones. And, you don’t have to just stick to tofu spreads! Try them out with our dressings, too. Two of our favorites are the Honey Mustard with apples and dried cranberries or Blue Cheese on top of veggies and a cracker (photos above).

Easy Thanksgiving Salads

Family, friends, football, and of course enough turkey and pumpkin pie to send you into a weekend long food coma. Thanksgiving is quickly approaching and like many of you, we too have been scrambling to come up with delicious and easy Thanksgiving salads to put on the table.

Thanksgiving is all about tradition, but we wanted to spice things up a bit and create a few easy salads that will leave you and your guests feeling thankful and totally impressed!

Be sure to check out this tasty Vegetarian Turkey appetizer, sure to please everyone at Thanksgiving. Who doesn’t love a little bit of Toby’s Tofu!? Maybe just don’t tell your stubborn, tofu-newbie guests that it’s tofu. They’ll be pleasantly surprised!

Stacked Pear Salad

Presentation is a must at any holiday gathering, so why not wow your guests’ from the start. This stacked pear salad is the perfect starter dish to your Thanksgiving meal, and easier than anyone has to know. Start by slicing a pear and then stacking it in the middle of a fresh bed of romaine lettuce (as shown below). Add sliced roasted sweet potatoes, pomegranate seeds, and dried cranberries around the pear, and then drizzle with Toby’s Blue Cheese. A+ for presentation and taste!

Adding seasonal fruits on top of fresh greens is a quick and easy way to spruce up any salad. We sprinkled a sliced pear and pomegranate seeds on top of spinach, and then added walnuts and Toby’s Chunky Feta dressing to finish it off.

Roasted Delicata Squash Salad

Delicata squash are a unique squash with an edible outer skin. Start off by roasting your delicata squash. Halve them and scoop out the insides or pop them in whole. Once roasted, slice into half rings. Top with dried cranberries and Toby’s Chunky Feta. Easy “salad” for any Thanksgiving table!

2. Harvest Cobb Salad

With the abundance of squash around right now, we tried a seasonal twist on the traditional Cobb Salad, and the result was simply amazing. Start off with a generous serving of romaine lettuce. Then layer each of your ingredients row by row. We used hard-boiled eggs, diced apples, candied walnuts, roasted butternut squash, and avocado. Drizzle with Toby’s Blue Cheese, and enjoy!

It’s a great way to use leftover roasted squash and make use of all the other fall goodies out there!

3. Apple, Cranberry, and Pecan Salad
