This Honey Mustard Apple Kale and Carrot Salad is super easy to put together as a side to any main meal. It’s perfect for winter with these cold weather crops. I swear kale and carrots just taste better in the winter. I’ve heard that when carrots have a layer of snow when they’re growing they taste sweeter. I’m not sure how true that is, but somehow it makes sense. Cold weather carrots are just so much better for some reason! I really just love using carrots in the winter. Just so good!

To prepare, just slice up your carrots and apples into matchstick sized slivers and add to a bed of chopped kale. Drizzle with Honey Mustard. Done! Salad making is so easy with Toby’s dressing. Just rely on a few staple veggies, a leafy green and you’re set. Simple salads are the best ones.

It’s almost a new year, so why not add a twist to the classic garlic bread. Start by slicing your french baguette into ½ inch thick slices. Drizzle with olive oil and chopped garlic and toast in oven for about 5 minutes on 350ºF. Remove from oven and sprinkle cheddar and mozzarella cheese mixture on top. Throw back in oven for another 5-10 minutes depending on how melted you would like the cheese.

Plate your garlic bread, and drizzle Toby’s Blue Cheese. Top with fresh chives and enjoy!

This tomato, bacon, and feta crostini is sure to be the hit at any New Year’s Eve party!

Start by chopping your bacon into small chunks and throwing into a frying pan. While that is cooking, toast your french baguette for about 10 minutes on 350ºF. Slice into ½ inch thick slices and top with Toby’s Chunky Feta. Add crumbled bacon and top with a halved tomato.

Start by toasting your french baguette for about 10 minutes on 350ºF. Slice into ½ inch thick slices and spread with goat cheese. Stack a sliced pear or apple on top. Drizzle with Toby’s Honey Mustard Dressing, and sprinkle with dried cranberries.

An oldie, but a goodie, this ranch caprese crostini is delicious and one of our favorites here at Toby’s.

Again, start by toasting your french baguette for about 10 minutes on 350ºF. Slather with ranch and top with 1-2 tomato slices, torn basil leaves, salt and pepper. Drizzle with olive oil and vinegar.

Holiday Canapés

Canapés are the perfect holiday appetizer because they’re bite sized, delicious, and, most importantly, easy to put together. Have people make their own with a little canapé bar, or serve up some of your favorites.

In case you’re a little lost, we put together this fool-proof guide to making perfect canapés with our tofu spreads and a few recipes for our favorite holiday canapés.

Start with a cracker or sliced veggie (like thinly sliced cucumber rounds). Scoop Toby’s tofu – either with a melon baller or a pastry bag for the perfect presentation. Top with another veggie, like halved cherry tomatoes, something pickled, or some avocado. Garnish with a drop of balsamic reduction, a dash of hot sauce or with sprouts and herbs.

Try slices of pita bread and some spicy options with pickled jalapeños and a dash of hot sauce. We recommend going with the original or lite tofu spreads for the hotter ones. And, you don’t have to just stick to tofu spreads! Try them out with our dressings, too. Two of our favorites are the Honey Mustard with apples and dried cranberries or Blue Cheese on top of veggies and a cracker (photos above).

That way, when you need a break from all of the hearty fall soups you are cooking up, you have some simple recipes at the back of your hand.

1. Kale Crunch Salad

Fresh kale and apples are signature signs that autumn has arrived. This simple combination of kale, apple (we used Fuji), candied walnuts, and Toby’s Honey Mustard Dressing has the perfect balance of crunch, along with amazing autumn flavors from the apples, kale and candied walnuts.

2. Harvest Cobb Salad

With the abundance of squash around right now, we tried a seasonal twist on the traditional Cobb Salad, and the result was simply amazing. Start off with a generous serving of romaine lettuce. Then layer each of your ingredients row by row. We used hard-boiled eggs, diced apples, candied walnuts, roasted butternut squash, and avocado. Drizzle with Toby’s Blue Cheese, and enjoy!

It’s a great way to use leftover roasted squash and make use of all the other fall goodies out there!

It’s National Sandwich Month and instead of giving you a typical ham and cheese sandwich, we’re shaking things up a bit. Perfect as a late night snack or as a twist on an old lunchtime favorite for yourself or the kiddos, this sandwich is sure to leave your taste buds wanting more!

Turkey, Apple, and Brie Sandwich

Turkey, apple, and brie may seem like an odd combination, but when you add Toby’s Honey Mustard the flavors are perfectly balanced.

Start by toasting your favorite bread (we used a local whole grain loaf), followed by a generous amount of brie cheese, then lettuce, turkey and apple. Finish off the sandwich by drizzling Toby’s Honey Mustard over the top, and serve either open or closed-faced.

How-To:

  1. Toast your slice of whole grain bread (or two, if you’re not doing open faced)
  2. Spread brie cheese on bread
  3. Top with romaine lettuce, turkey, and apple slices
  4. Drizzle Toby’s Honey Mustard and a dash of pepper

Pro Tip:

Really up your sandwich game by toasting your bread, brie and turkey before adding lettuce and Toby’s Dressing. Crunchy, warm and delicious for sure.

Honey Mustard Potato and Green Bean roasted salad

Spring Potato and Green Bean Salad

With the warm weather we’ve been having, spring produce is earlier than ever. We’ve found the best use for all those fresh new potatoes, red potatoes, purple potatoes, or whatever else you can find. And coincidently, it’s National Salad Month, so this pairs perfectly with both. You just can’t say yum enough!Honey Mustard Potato and Green Bean roasted salad

The salad is simple enough to put together. Gather your green beans and assorted potatoes. Halve or quarter the potatoes until they’re roughly the same size. Toss  both veggies with olive oil, salt and pepper.

Pre-Roasted Veggies

Roast the veggies as directed below, let cool slightly. Once less hot, toss with Honey Mustard Dressing. Serve immediately (warm) or refrigerate and serve as a cold salad later on. Both are delicious, and the longer it waits (but be sure to eat within a few days), the longer the flavors meld together.

Spring Potato and Green Bean Salad

This Spring Potato and Green Bean Salad with Honey Mustard Dressing will be your easiest, most delicious salad you can bring to a potluck, serve at dinner, or make on a weeknight. Just roast the potatoes and beans, toss with Honey Mustard Dressing.

Ingredients:

  • 1.5 pounds of potatoes (red, new, purple, etc.)
  • 3/4 pounds of green beans
  • cooking oil
  • salt & pepper
  • 1/3 cup Honey Mustard Dressing

How-To:

  1. Preheat oven to 375. Spray cooking sheet with cooking oil. Cut potatoes in half or into quarters so they’re roughly the same size.
  2. Spread potatoes and beans on cooking sheet. Toss with salt, pepper and cooking oil.
  3. Roast for 45 minutes or until potatoes are cooked through, turning twice during cooking (check them at about 15 minute intervals).
  4. Once cooked, set aside and let cool slightly. Once cool, toss with dressing. Serve immediately or refrigerate overnight.
