Continue to kick off your 2016 with another delicious salad using Toby’s Chunky Feta Dressing along with seasonal greens. This winter greens and feta salad, packed with some of our favorite veggies and topped with juicy pomegranate seeds is the perfect addition to any meal. Use as a starter or as the main course either way you do it you are sure to be left wanting more!

Ingredients:

  • 4 cups winter mixed greens
  • 1/2 cup snow peas, trimmed and cut into smaller pieces
  • 1 small cucumber, halved and sliced
  • 1 avocado, peeled and sliced
  • ¼ cup pomegranate seeds
  • Toby’s Chunky Feta Dressing

How-To:

  1. Combine winter greens, snow peas, cucumber and avocado. Sprinkle pomegranate seeds. Serve with Chunky Feta Dressing and enjoy!

Strawberry Feta Salad

This Strawberry Feta Salad is a go-to recipe. Easy to pull together and always delicious! Really though, anything with Toby’s Chunky Feta dressing is a family favorite at my house. I’m constantly pestered to bring it home to my in-laws. They mix it with coleslaw, dip veggies, and top all their salads with it. Seriously addicting! So, anytime I have to make a salad for dinner I always bring along Toby’s Chunky Feta Dressing. That way, I can never disappoint and I earn good daughter-in-law points.

This time, instead of just greens and whatever veggies I have lying around, I added a little fruit into the mix. Strawberries and feta naturally go together, so why not Toby’s & strawberries? Like I said, another reason to bring out the feta is always welcome, so we tried it out. Results were amazing! Definitely one we’ll be making again for family gatherings.

Since strawberries and feta are destined to be together, this salad pairs perfectly with Toby’s Chunky Feta and will not disappoint. Once you mix the ingredients, drizzle Feta and enjoy.

  • 4 cups (3 ounces) salad mix of choice
  • 3 beets, cooked and chopped
  • 1 cup cucumber, sliced
  • 1 cup strawberries, sliced

This salad is the perfect lunch salad to get you through a dreary January day. Quinoa is a delicious and nutritious staple, and it pairs perfectly with our Chunky Feta Dressing and in salads (or both!).

Quinoa also has a ton of protein, so no need to add beans or meat to this salad – it’ll get you though the day!

We started with fresh, local winter greens and topped them with refreshing veggies – like tomatoes, radishes and cucumbers. Add avocado for fat, and drizzle with the world’s best Feta Dressing. Seriously, a lunchtime staple.

If you’re transporting your lunch, just wait to add the dressing until you’re about to eat. Or, add the dressing only in the quinoa and stir it up when you’re ready. That way, your greens and other veggies stay nice and fresh.

Ingredients:

  • About 3 ounces (or three handfuls) mixed greens
  • 1/2 medium avocado, sliced
  • 2 radishes, sliced
  • 1/2 small cucumber, chopped into bite-sized pieces
  • 1 handful cherry tomatoes, sliced in half
  • 1/2 cup cooked quinoa
  • Toby’s Chunky Feta Dressing

How-To:

  1. Arrange the salad starting with the mixed greens then veggies. Top with cooked quinoa. Drizzle with Toby’s Chunky Feta and serve immediately.

It’s almost a new year, so why not add a twist to the classic garlic bread. Start by slicing your french baguette into ½ inch thick slices. Drizzle with olive oil and chopped garlic and toast in oven for about 5 minutes on 350ºF. Remove from oven and sprinkle cheddar and mozzarella cheese mixture on top. Throw back in oven for another 5-10 minutes depending on how melted you would like the cheese.

Plate your garlic bread, and drizzle Toby’s Blue Cheese. Top with fresh chives and enjoy!

This tomato, bacon, and feta crostini is sure to be the hit at any New Year’s Eve party!

Start by chopping your bacon into small chunks and throwing into a frying pan. While that is cooking, toast your french baguette for about 10 minutes on 350ºF. Slice into ½ inch thick slices and top with Toby’s Chunky Feta. Add crumbled bacon and top with a halved tomato.

Easy Thanksgiving Salads

Family, friends, football, and of course enough turkey and pumpkin pie to send you into a weekend long food coma. Thanksgiving is quickly approaching and like many of you, we too have been scrambling to come up with delicious and easy Thanksgiving salads to put on the table.

Thanksgiving is all about tradition, but we wanted to spice things up a bit and create a few easy salads that will leave you and your guests feeling thankful and totally impressed!

Be sure to check out this tasty Vegetarian Turkey appetizer, sure to please everyone at Thanksgiving. Who doesn’t love a little bit of Toby’s Tofu!? Maybe just don’t tell your stubborn, tofu-newbie guests that it’s tofu. They’ll be pleasantly surprised!

Stacked Pear Salad

Presentation is a must at any holiday gathering, so why not wow your guests’ from the start. This stacked pear salad is the perfect starter dish to your Thanksgiving meal, and easier than anyone has to know. Start by slicing a pear and then stacking it in the middle of a fresh bed of romaine lettuce (as shown below). Add sliced roasted sweet potatoes, pomegranate seeds, and dried cranberries around the pear, and then drizzle with Toby’s Blue Cheese. A+ for presentation and taste!

Adding seasonal fruits on top of fresh greens is a quick and easy way to spruce up any salad. We sprinkled a sliced pear and pomegranate seeds on top of spinach, and then added walnuts and Toby’s Chunky Feta dressing to finish it off.

Roasted Delicata Squash Salad

Delicata squash are a unique squash with an edible outer skin. Start off by roasting your delicata squash. Halve them and scoop out the insides or pop them in whole. Once roasted, slice into half rings. Top with dried cranberries and Toby’s Chunky Feta. Easy “salad” for any Thanksgiving table!

Crackers, Tofu Spread, and Fruit

We know how much kids love cheese and crackers, so we decided to create a spin-off of the classic school lunch by swapping the cheese with our Toby’s tofu spreads & dips. Pack your kids favorite crackers along with a generous amount of tofu pate. Add veggies for toppers (we did tomatoes, but cucumbers, sweet pickles, or peppers also work). Pair with a banana or bowl of fresh fruit and you have a healthy lunch that your little one is sure to love!

Toby’s Tofu Sandwich and Fruit

A sandwich is another lunchbox favorite, but what about a tofu pate sandwich? As crazy as it sounds, kids will love this tofu pate sandwich, and even better it’s packed with protein to keep them going throughout the day. We spread our tofu pate on top of Sourdough (but feel free to use your favorite bread) and then added lettuce and tomato. Pair with a side of fruit and you have another lunch all set to go.

Chicken and Rice Bowl with Feta and Fruit

Another simple lunch option, and soon to be their new lunchbox favorite is a rice bowl (This works great for grown-ups, too!). We placed rice, chicken, and steamed broccoli into a bowl and then topped it off with Toby’s Chunky Feta Dressing – simple and absolutely delicious!

Rice bowls are perfect to pack with the kids (and spouses) for lunch!

Grilled Zucchini Salad with Feta

In honor of National Grilling Month and the abundance of zucchini in my fridge, we concocted this delicious grilled zucchini salad that comes together in minutes with very little prep time. And, with just a couple of ingredients, you’re all set for a summertime meal that you can eat up by yourself or serve to guests if you’re feeling generous and hospitable.

Grilled Zucchini Salad with Feta

This recipe is easy and super straightforward. Customize to your liking or whatever summer veggies you have in excess. We added a few carrots (not pictured) and absolutely loved them. But, not everyone likes cooked carrots. So we won’t force you to eat them (however, Toby’s dressing makes any veggie worth eating – we promise!).

Ingredients:

Grilled Zucchini Salad with Feta

How-To:

  1. Turn on your grill.
  2. Wash your delicious, fresh zucchini. Slice the ends off. Cut in half, length-wise.
  3. Brush zucchini with olive oil.
  4. Place zucchini face down over medium high heat on your grill. Let cook (covered) for about 5-7 minutes. Flip (with tongs) to their backside and admire those beautiful grill marks. Close the grill lid. Let cook another 5 or so minutes, until tender but not mushy.
  5. Remove from grill, bring inside. Let cool slightly. Slice into small chunks for the salad.

Pro Tips:

  • Any kind of squash or root vegetables will work great for this salad. If you like cooked carrots, try it. They might even be better than the zucchini. But what’s not good with Toby’s Feta Dressing?!
  • Highly recommend enjoying this recipe for National Grilling Month with a little Strawberry Lemonade Daiquiri, compliments of Genesis Juice.

The 4th of July is the perfect time of year for family barbecues and fun get-togethers. Being from the Midwest, a family tradition of mine is to head up to our cabin and enjoy food, friends and fireworks in honor of Independence Day.

Tofu Pinwheels

Pinwheels are a quick and easy snack for any occasion, and when made with Toby’s Tofu Spread they are sure to be delicious! Perfect as an appetizer or even as a light lunch, these tofu pinwheels will be a hit at any 4th of July gathering.

Ingredients:

  • Tortillas
  • 1 8 0z. container of Toby’s Lite Tofu Dip & Spread
  • 1 Tomato, diced
  • Spring mix
  • Salt and pepper, to taste
  • Sriracha sauce (optional)
  • Flag toothpicks – because who doesn’t love patriotic pinwheels!

How-to:

  • Spread Toby’s Lite Tofu Dip & Spread over your tortillas and sprinkle diced tomatoes and spring mix evenly over the top. Add sriracha sauce if you are looking for an extra kick – not kid friendly!
  • Roll up tortilla and cut into 1/2 inch slices. Add flag toothpicks and serve!

Our red, white and blue salad is great for any 4th of July celebration! Even better than that, it is quick and easy to make. Just toss all of the ingredients together and serve!

  • ¾ cup fresh strawberries, diced
  • ½ cup fresh blueberries
  • ½ cup of Toby’s Chunky Feta dressing
