These Christmas veggie trays are great for more than just your work potluck, too. For Christmas dinner, if you’re not hosting you’re often tasked with bringing appetizers or a tray of goodies. We say, don’t just buy some pre-made veggie tray and risk the maltodextrin, MSG, modified food starch, artificial colors and flavors, etc. etc. etc. Forget all those disgusting ingredients in those other veggie trays (mostly, in those dressings that come with them) and old veggies that may or may not have been sitting around or browning. Easier said than done, right?

Nope! We’ve got you covered. These last minute Christmas veggie trays are easy to pull together and about as festive as you can get. We love these unique and last minute Christmas veggie tray ideas – perfect for work potlucks, family dinners, holiday parties, ulgy sweater parties, white elephant parties, and pretty much whatever else you may do this December.

Veggie Ornament

Our first favorite last minute Christmas veggie tray is this veggie ornament.

We decided to take a rimmed, circle plate and decorate it with veggies to make it look like a giant ornament. Easy, peasy. Veggies you need: baby carrots, grape tomatoes, and sliced cucumbers. Grab a jar of Toby’s Ranch and watch your beautiful veggie ornament tray disappear.

If you have the space, we suggest decorating the table with a few ornaments and adding a little square piece of paper to give the ornament effect!

This one is my personal favorite. It’s still easy to put together and but adds a few more veggies to the mix and takes just a little more creativity. You could also make this on an oval plate or a square plate and make the hat and beard a little longer. But, the nice thing is that they can both be made on matching plates.

Again, all you’ll need: grape tomatoes, cauliflower florets, baby carrots, and sliced cucumbers. Grab a jar of Toby’s dressing, we suggest Blue Cheese, and serve them up!

We created this Stuffed Mushrooms recipe a few months back, in the prime time of Oregon Duck football season. It’s an easy one to put together, and a perfect crowd pleasing recipe. Just don’t tell the guys it’s tofu and no one will ever know about a healthier swap. You could also try this with Toby’s Jalapeño Tofu Spread & Dip. If you are looking for a little spice, try tossing a little hot sauce on top after broiling.

Buffalo Chicken Cups - Dip in this Blue Cheese Dressing. IT IS SO GOOD!

We are getting closer to Super Bowl weekend and what’s a better way to cheer on your favorite team than by enjoying some classic appetizers? Around here, we like to get creative in our cooking and our football party spreads, so we whipped up these Buffalo Chicken Cups with Toby’s Blue Cheese. They’re tangy, easy to put together, and really REALLY delicious.

As you might already know we’ve been sharing our favorite appetizer recipes all week long and I promise, they just keep getting better and better!

While chicken wings will always be a go to game day appetizer we thought we would get creative and whip up something even better. These buffalo chicken cups have the same great taste as wings, but are not as messy to eat and a more fun and creative way to enjoy buffalo chicken! And with Toby’s Blue Cheese Dressing you can’t go wrong!

Buffalo Chicken Cups with Toby’s Blue Cheese

I said it already, but you’re going to love these Buffalo Chicken Cups. They’re made with wonton wrappers, chopped veggies and chicken mixed in with Buffalo Sauce. Dip in Toby’s Blue Cheese. Swirl our Blue Cheese Dressing with buffalo sauce to make an even more impressive spread (without much work!).

  • 1 package of chicken breast tenderloins
  • 1 package of wonton wrappers
  • ½ cup of buffalo sauce
  • 3 stalks celery, diced
  • 1 cup cheddar cheese
  • Chives, chopped
  • Toby’s Blue Cheese Dressing


  1. Preheat oven to 375 degrees.
  2. Cook chicken on stove top. Once finished, remove from pan and shred.
  3. Combine shredded chicken, diced celery and half a cup of buffalo sauce. Mix together and set aside.
  4. Place wonton wrappers into a muffin tin (we used a mini muffin tin and they came out as the perfect bite-sized appetizer!). Scoop a tablespoon size of the buffalo chicken mixture into each wrap.
  5. Place in oven for 5-8 minutes. Remove and sprinkle cheddar cheese and then place back in oven until cheese is melted.
  6. Remove from oven and let cool. Plate and garnish with chopped chives. Serve with Toby’s Blue Cheese Dressing.

It’s almost a new year, so why not add a twist to the classic garlic bread. Start by slicing your french baguette into ½ inch thick slices. Drizzle with olive oil and chopped garlic and toast in oven for about 5 minutes on 350ºF. Remove from oven and sprinkle cheddar and mozzarella cheese mixture on top. Throw back in oven for another 5-10 minutes depending on how melted you would like the cheese.

Plate your garlic bread, and drizzle Toby’s Blue Cheese. Top with fresh chives and enjoy!

This tomato, bacon, and feta crostini is sure to be the hit at any New Year’s Eve party!

Start by chopping your bacon into small chunks and throwing into a frying pan. While that is cooking, toast your french baguette for about 10 minutes on 350ºF. Slice into ½ inch thick slices and top with Toby’s Chunky Feta. Add crumbled bacon and top with a halved tomato.

An oldie, but a goodie, this ranch caprese crostini is delicious and one of our favorites here at Toby’s.

Again, start by toasting your french baguette for about 10 minutes on 350ºF. Slather with ranch and top with 1-2 tomato slices, torn basil leaves, salt and pepper. Drizzle with olive oil and vinegar.

Toby created her homemade dressings get her two young boys to eat their veggies. It was such a hit that they complained when the veggie platter wasn’t a part of dinner.

So true to Toby’s initial mission to make veggies irresistible to her kids, we’re sharing some deliciously fun veggie spread and salad ideas for your Christmas celebrations!

Christmas Tree Veggie Platter

First up, this delicious Christmas tree veggie platter. Use broccoli florets for the greenery and cherry tomatoes for the ornaments. We used a sliced cucumber for the base, and of course, couldn’t leave the tree without a topper. Slice a piece of cheese and use a star-shaped cookie cutter for the top! Simple and irresistible.

If you need a few veggie trays for the table or Christmas trees just aren’t your thing – try this veggie wreath. It’s even easier than the tree, and just as irresistible. We suggest a ranch pairing.

Same idea as the veggie wreath, just with salad instead! Serve everyone their own individual salads or make a large serving size instead. One of our favorite holiday salad recipes is mixed baby greens, apples, blue cheese, and dried cranberries all topped with Toby’s Blue Cheese.

Apple Salad

In case your kiddos really turn their nose at anything salad-like (Toby’s kids definitely did, so you’re not alone!). Slice up an apple, stuff dried cranberries and pieces of chopped kale (we used baby kale), and drizzle Toby’s Blue Cheese on top, and top with more blue cheese! Who can say no to that?! It might be a little difficult for kids to eat, so you might just want this one for the big-kids table.

Canapés are the perfect holiday appetizer because they’re bite sized, delicious, and, most importantly, easy to put together. Have people make their own with a little canapé bar, or serve up some of your favorites.

In case you’re a little lost, we put together this fool-proof guide to making perfect canapés with our tofu spreads and a few recipes for our favorite holiday canapés.

Start with a cracker or sliced veggie (like thinly sliced cucumber rounds). Scoop Toby’s tofu – either with a melon baller or a pastry bag for the perfect presentation. Top with another veggie, like halved cherry tomatoes, something pickled, or some avocado. Garnish with a drop of balsamic reduction, a dash of hot sauce or with sprouts and herbs.

Try slices of pita bread and some spicy options with pickled jalapeños and a dash of hot sauce. We recommend going with the original or lite tofu spreads for the hotter ones. And, you don’t have to just stick to tofu spreads! Try them out with our dressings, too. Two of our favorites are the Honey Mustard with apples and dried cranberries or Blue Cheese on top of veggies and a cracker (photos above).

Easy Thanksgiving Salads

Family, friends, football, and of course enough turkey and pumpkin pie to send you into a weekend long food coma. Thanksgiving is quickly approaching and like many of you, we too have been scrambling to come up with delicious and easy Thanksgiving salads to put on the table.

Thanksgiving is all about tradition, but we wanted to spice things up a bit and create a few easy salads that will leave you and your guests feeling thankful and totally impressed!

Be sure to check out this tasty Vegetarian Turkey appetizer, sure to please everyone at Thanksgiving. Who doesn’t love a little bit of Toby’s Tofu!? Maybe just don’t tell your stubborn, tofu-newbie guests that it’s tofu. They’ll be pleasantly surprised!

Stacked Pear Salad

Presentation is a must at any holiday gathering, so why not wow your guests’ from the start. This stacked pear salad is the perfect starter dish to your Thanksgiving meal, and easier than anyone has to know. Start by slicing a pear and then stacking it in the middle of a fresh bed of romaine lettuce (as shown below). Add sliced roasted sweet potatoes, pomegranate seeds, and dried cranberries around the pear, and then drizzle with Toby’s Blue Cheese. A+ for presentation and taste!

Adding seasonal fruits on top of fresh greens is a quick and easy way to spruce up any salad. We sprinkled a sliced pear and pomegranate seeds on top of spinach, and then added walnuts and Toby’s Chunky Feta dressing to finish it off.

Roasted Delicata Squash Salad

Delicata squash are a unique squash with an edible outer skin. Start off by roasting your delicata squash. Halve them and scoop out the insides or pop them in whole. Once roasted, slice into half rings. Top with dried cranberries and Toby’s Chunky Feta. Easy “salad” for any Thanksgiving table!

That way, when you need a break from all of the hearty fall soups you are cooking up, you have some simple recipes at the back of your hand.

1. Kale Crunch Salad

Fresh kale and apples are signature signs that autumn has arrived. This simple combination of kale, apple (we used Fuji), candied walnuts, and Toby’s Honey Mustard Dressing has the perfect balance of crunch, along with amazing autumn flavors from the apples, kale and candied walnuts.

2. Harvest Cobb Salad

With the abundance of squash around right now, we tried a seasonal twist on the traditional Cobb Salad, and the result was simply amazing. Start off with a generous serving of romaine lettuce. Then layer each of your ingredients row by row. We used hard-boiled eggs, diced apples, candied walnuts, roasted butternut squash, and avocado. Drizzle with Toby’s Blue Cheese, and enjoy!

It’s a great way to use leftover roasted squash and make use of all the other fall goodies out there!

3. Apple, Cranberry, and Pecan Salad

The last of our harvest-themed salads is the perfect starter dish for any autumn gathering. Toss together spinach, apples, dried cranberries, and pecans, and drizzle with Toby’s Honey Mustard. Light and crisp just light the autumn air!
